Craving sushi but struggling to find the time and money for an expensive dinner out? No problem—make it at home! This spicy crab sushi is a delicious, exquisite option to take your dinner to the next level!

If you ask me what my favorite savory food is... 100% of the time, I’ll say sushi. I tried sushi for the first time when I was 16; there weren't many sushi restaurants around when I was growing up, so it was something new to me. But I was hooked instantly! In fact, I worked at a sushi restaurant during college, and it was one of my favorite jobs! Although some sushi varieties found in restaurants are highly specialized or use fish that are hard to find at the local supermarket, basic rolls are actually really easy to make at home!

This *Spicy Kani Maki* (spicy crab roll) uses just a few simple ingredients but is packed with flavor! We make a simple crab salad with homemade spicy mayo and wrap it in crisp cucumber slices. It offers the perfect contrast of flavors and textures.

If you know how to roll sushi, you can whip up this recipe in minutes. And if you’ve never tried rolling sushi before, this is the perfect roll to start with! I’ve included step-by-step instructions with photos in the post to help you out.

Now that both my husband and I know how to make our own sushi, we often buy crab or sashimi at the supermarket and make it ourselves. It works out much cheaper than eating out! Plus, it turns out better every time!

  1. 3 tablespoons mayonnaise
  2. 2 tablespoons Sriracha chili sauce
  3. 6 ounces imitation crab meat
  4. 1/2 medium cucumber
  5. 4 sheets of nori seaweed
  6. 3 cups cooked sushi rice
  7. Sesame seeds (optional)

  2. Sharp knife: a very sharp knife is essential for slicing sushi rolls cleanly. I prefer a serrated knife, but you can also use a good chef's knife.
  3. Plastic wrap

When making sushi, I find it helpful to have all the ingredients ready before I start rolling.

Preparation:


  1. Spicy mayo: In a small bowl, whisk together the chili sauce and mayonnaise until well combined.
  2. Crab: Shred or separate the imitation crab into thin strips. Add the shredded crab to the bowl with the spicy mayo and stir to coat everything evenly.
  3. Cucumber: Peel half of the cucumber and cut it into thin strips.


To roll the sushi:


  1. Place a sheet of nori seaweed on the bamboo sushi mat, with the shiny side facing down and the lines running horizontally.
  2. Spread 3/4 cup of sushi rice (cooked and cooled) over the nori sheet; spread it gently to cover approximately 80% of the surface, leaving a strip of about 2.5 cm (one inch) clear at one end. The rice layer should be no more than 0.6 cm (1/4 inch) thick.
  3. Spread one-quarter of the spicy crab salad in a strip along the center of the rice. Place a few strips of cucumber over the crab.
  4. Start at the bottom edge and roll carefully, using the bamboo mat to compact the ingredients. Stop when you reach the strip of nori that has no rice. Dip your clean fingers in a bowl of water and moisten that strip. Press the moistened nori against the rest of the roll to seal it.
  5. Place the finished roll, seam-side down, on a piece of plastic wrap; wrap it tightly while maintaining its shape. Let it rest for 10 minutes.
  6. Repeat the process until all 4 rolls are prepared.
  7. To serve, remove the wrapping from a roll and cut it into 8 pieces. After cutting each piece, rotate the sushi roll to prevent it from flattening and to ensure the slices keep a nice, round shape.

  1. Rice – Sushi rice is a specific type of short-grain white rice mixed with a blend of rice vinegar, sugar, and salt, giving it a slightly sticky texture and a firm bite. It is precisely this stickiness that holds the rice together when making sushi rolls. This recipe includes a tutorial for making sushi rice at home; it’s our family’s favorite!
  2. Crab – We use imitation crab for this recipe because it’s a common ingredient in sushi restaurants, easy to find, affordable, and my kids love it. If you prefer, you can use real crab meat, though it will likely be more expensive.
  3. Additional ingredients – It’s very easy to customize this sushi roll to your liking! Try adding avocado slices, wasabi mayo instead of spicy mayo, or any of your favorite sushi ingredients.
  4. Serving suggestions – Traditional sushi accompaniments include soy sauce, prepared wasabi, and pickled ginger. You can also serve it with extra spicy mayo for dipping the rolls. I love it!
  5. Storage – Leftovers can be stored in the refrigerator in an airtight container for 1 or 2 days. Although this spicy crab roll doesn't contain raw fish, the rice tends to harden after a couple of days, so the flavor isn't quite as perfect as freshly made sushi.
  6. Cleanup – To make cleanup easier, cover the bamboo mat with plastic wrap before rolling the sushi. If you don't have plastic wrap, I recommend soaking the mat in soapy water immediately after use to prevent bits of rice from sticking to it.
